Vanilla Planifolia is the most frequently grown species. Most of the vanilla grown in India is Vanilla Planifolia. When cured correctly the beans produce vanilla with a bourbon flavour, named after the French island. Bourbon vanilla is widely used by restaurants and chefs.
Vanilla Tahitiensis is principally grown in Tahiti, but also in Indonesia and Papua New Guinea. It has narrower leaves than Planifolia. The cured vanilla pods have a distinctive perfume like vanilla flavour. They're used mainly in perfume, to a lesser extent by chefs.
